Sausage Casserole

Last night was a ‘veggie night’  - we alternate between meat, veggie and fish each night to keep costs down, but also because we are both trying to loose weight and eat a well balanced diet.

I made a sausage casserole - using Linda McCartney Veggie sausages.

It was a bit improvised and used up the last couple of gulps of a bottle of red wine. Here are the ingredients:

Veg Saus £1.75
Tin mushrooms 42p
Tin Toms 30p
Pepper 35p
Marmite 10p
Carrots 30p
Stock Cube 7p
2 Onions 27p
50g Lentils 20p
Swede 65p (to serve)
Broccoli 79p (to serve)
Total £5.20

With mashed swede instead of potato, it worked out at a respectable 481 calories and as we have enough for lunch tomorrow, £1.30 per portion.

It struck me that this meal is another example of stretching what  we had - eating the third sausage each rather than putting it in a lunchbox would have been really easy, but because it was fleshed out with a lot of veg and a measly amount of lentils, we didn't really notice. It also would have made the calories nearer 700 and the cost £2.60 per portion. Willpower is a winner!!
